Main items are :
Chicken – cut it into small pieces.
Raw/unripe mango – medium sized
For marination :
Dry red chillies – 6 nos
Sliced onion – 2 medium sized
Coconut Oil – 1 tbsp
Chopped ginger – 1 tbsp
Chopped garlic – 1 tbsp ( 4 to 5 cloves)
Kashmiri chilli powder – 1 tbsp
Fennel seeds – 3/4 tsp
Curd – 4 tbsp
Salt – 1 tsp
For cooking :
Coconut oil – 2 tbsp
Ghee – 1 1/2 tbsp + 1 tsp
Cardamom – 5 nos
Cinnamon sticks – 2 inch piece
Chopped garlic – 1 1/2 tbsp
Ground paste – half portion
Sliced onion – 2 nos
Coriander powder – 1 1/2 tsp
Garam masala – 1 1/2 tsp
Coconut milk – 1 cup
Thin sliced tomato- 2 nos (Or tomato puree)
Marinated chicken – 1 kg
Chopped Raw mango – 1
Salt – As needed

Heat a pan and roast the dried red chillies for 1 to 2 minutes.Remove it and kept aside.In the same pan
add the onions and saute till the color changes.then add the chopped garlic and ginger and saute it for
2 to 3 minutes and off the flame and allow it for cooling.After cooling add the roasted items along with 1 tbsp of kashmiri chilli powder and 3/4 tsp of fennel seeds in a blender and make a fine paste.
Add 4 tbsp of curd mix with masala paste.Take half of the paste and marinate Chicken along with 1 tsp of salt and keep it for 1 hr. It help to easy way to add extra flavour and tender
After 1 hour start cooking preparation, heat a pot and add 2 tbsp of coconut oil along with 1 1/2 tbsp
of ghee. Make the flame in to low and add 5 cardamom,2 inch piece cinnamon sticks along with 1 1/2 tbsp of chopped garlic and saute it for 2 minutes.then keep ur flame low temperature and add the remaining ground paste and stir it for a minute.
Add 1 1/2 tsp of garam masala and coriander powder and saute it for 1 minute ,followed by add the sliced onions and saute it for 2 to 3 minutes now add medium thick coconut milk andAfter add the chopped tomato or tomato puree and cook it till the tomatoes became soft.
Now its the time to add the marinated chicken along with the chopped raw mango and mix well.Add salt and cover and cook over medium high heat till the chicken cooks through.
Onced it’s cooked chicken open lid and add chopped coriander and curry leaves along with 1 tsp of ghee and mix everything well ..Our tasty and variety chicken curry is ready to serve.
