Ingredients:
1.Ash Gourd /kumbhalanga – 800 grams
2.Sugar – 1 cup
3.Safron/kesar – 1/4 tsp
4.Ghee – 1 tbsp
5.Cardamom powder – 1/2 tsp
6.Some sliced pistachuos and almonds
7.Roasted cashews or raisins (optional)
Preparations :
Take the ash gourd then cut into pieces and remove its seeds.Take the flesh part and grate it by using a grater.Spread it in a heavy bottom pan and cook in a medium flame.
Stir it occasionally till it became soft.It may take 20-25 minutes.When the water reduces from it you can add
1 cup sugar and mix it till the sugar dissolves completely.
Add 1/4 tsp saffron and mix it and boil for 5 minutes.
When it starts to thicken make the flame into low and cook it for 10 minutes.After can add 1 tbsp of ghee and mix it till the ghee absorbs into the halwa.Again cook for 2 minutes till the ghee releases from the sides.
Add 1/2 tsp cardamom and some sliced nuts or roasted nuts into it and mix well.After cooling you can serve the halwa.
