Recipe by LAKSHMI DILEEP
Butter – ½ cup (110g) room temperature
Jaggery powder – ½ cup (100g)
Eggs – 2 Nos.
Vanilla essence – 1 tsp (5g)
Wheat flour-1 ¼ cup (160g)
Baking powder-1½ tsp (6g)
Dried fruits- ½ cup
Nuts – ½ cup (50g)
Preheat the oven at 180°C (350 °F).
Cut dried fruits into smaller pieces.
In a bowl add butter and jaggery powder, mix until creamy.
Mix well by adding eggs and vanilla essence to it.
Sieve in wheat flour and baking powder, mix until well blended.
Finally stir in chopped nuts and dried fruits to it.
Transfer the prepared dough to baking tray.
Make 2 long loafs and shape the side of loafs with spatula.
If needed dip the spatula to wheat flour before shaping loafs.
Bake loafs at 180°C for 25 minutes.
After baking take out loafs from oven and let it cool for 30 minutes.
After cooling completely, cut loafs into slices.
Spread the slices in the baking tray.
Bake it for another 15-17 minutes until golden brown.
Enjoy the Fruit and nuts biscotti with a cup of hot tea.
