Coconut rice is a healthy and flavoured white rice recipe mainly cooked with fresh grated coconut and boiled rice.

Ingredients :

1.Boiled rice – 2 cup
2.Grated Coconut – 1 cup ( need )
3.Coconut Oil – 3 tbsp
4.Mustard seeds – 1 tsp
5.Chana dal – 1 tsp
6.Urad dal – 1/2 tsp
7.Dried red chillies – 2 nos (if you want it spicy you can use green chillies)
8.Some curry leaves – 1/2 Spring
9.Salt – 1/2 tsp

Preparation :

Heat a pan and add 2 1/2 tbsp of coconut oil.when it became hot keep the flame into low and add 1 tsp mustard seeds to

Now add 1 tsp of chana dal along with 1/2 tsp of urad dal and dried red chillies
along with some curry leaves and saute it for a while.

Add 1 cup of grated coconut and stir and slightly fry for a minute.followed by add the boiled rice along with seasonings .and keep a lid to cover and cook for 2 -3 minutes .Same time open lid gently mix interval of times.Finally finish with 1/2 tbsp of coconut oil and serve with hot.
